These are the musings of a retired male. Some may be interesting, some may be boring, but all will be true. It will contain info om PEI and some links I find interesting. Pull up a chair and enjoy.

Here Goes Again!!!!

Well here I go trying to post my famous mustard pickle recipe but first a few tips to make it easier for you to both understand and do. This recipe will make 12 medium bottles. Use new lids and always boil bottles and covers before filling. Remove air from filled bottles before sealing by inserting a knife down inside of full bottle. The easiest way to peel cucumbers is with a potato, carrot peeler as you will not waste much, and the easiest way to remove cuks seeds is to cut in two lengthwise and use a melon baller. If you soak the vegetables overnight in a salt brine you will have a crispier pickle. This recipe is from Mrs Poole from down Montague way and makes a mild, sweet, wonderful pickle.

Vegetables:
2 Qts green cucumbers, peeled, seeded, & cut in small pieces.
2 Qts cauliflowers cut in small pieces.
2 Qts onions cut in small pieces.

Brine.
3/4 cup of salt to 4 Qts of water. Heat brine and soak vegies overnight. In morning drain and put vegies on a clean towel to dry.

Sauce:
1 cup flour.
6 cups vinegar, I use Heinz as it is a little stronger.
6 Tablespoons dry mustard.
1 1/2 Tablespoons tumerik.
Mix all with cold vinegar to make a paste.
Add
6 cups white sugar.
2 ounce pickling spice tied in cheese cloth, throw out after simmered.

Combine all ingredients add vegies and simmer for approx 20 minutes. Throw away bag with pickling spices and bottle while still hot. Install covers and set aside to wait for top to pop and lids to be depressed in center. This confirms you have vacuum sealed your bottles.
Store anywhere until opened and than refrigerate after opening.

I'm really PO'd

Well I just spent about 45 minutes posting my famous mustard pickle receipe pressed post and after waiting about 5 minutes was told that I had a service error. My question now is where in the name of sam hill did my receipe go, hopefully whoever gets it will try it and it will not be a complete waste of time but than again my time is not all that valuable.
Sorry folks but I am afraid I do not have time to do this receipe over today so you will have to wait until tomorrow, than again the last time this happened the lost post showed up later so it may come back on its own.
Till next time......

Just a quick note to say that because of time restraints I cannot publish a whole blog today. Tomorrow though I will be doing a recipe for mustard pickles which I can tell you that they are very easy to make and are as good as any you would ever want to make or eat. I will give you the story on the recipe tomorrow along with the recipe.
Till tomorrow, take care.

Today is the big day.

Today is the big day so let the banners fly and the crowd to cheer as I am going tp display my first recipe. I will start with a appetizer, next one I do will be a main course (possible Salt Cod Cakes) and I will than do a dessert (my famous apple pie). All the recipes I use will either be my Grandmothers or some other Island cook which I have tried and I like. This is not to say that cooks in other places can't cook but being an Islander I will be printing Island recipes only.
Here goes my first recipe:
Broccoli Salad.
2 heads of broccoli cut in bite sized pieces.
1/2 cup chopped onions.
1 1/2 cups shredded orange Cheddar cheese.
10 - 12 slices fried bacon, crumbled.
Place ingredients in a large bowl and mix.
Sauce.
3/4 cup mayonnaise or miracle whip, my choice.
1/2 cup white sugar.
4 tablespoons vinegar.
Mix ingredients well and pour over salad.
Mix all together well and chill in fridge before serving.
Other ingredients like carrots, cauliflower, and raisins can be added as to your taste.
If you like this kind of thing I think you will find this is excellent and can be changed according to your taste.
Their will be no story today since this recipe thing has made me hungry.
If anyone tries this recipe please let me know what you think of it.

Tomorrow is the big day!!!!!

Well tomorrow Monday 20, 2004 is the big day as I will be publishing my first recipe so start holding your breath all my fans out there. I know that I may be considered a bigot for my choice but I will be doing all PEI recipes only. Most will be for 6 to 8 people or 2 hungry Islanders. If anyone tries them I want to hear your comments be they good or bad. I will promise you they will be all good recipes but whether you like them are up to you.
I will be also asking some PEI questions from time to time with the chance you will win a prize but only if you send me an E-MAIL to the address I will give on the day of the contest.
I won a mention on nicks blog site but as I won one for a female I had to check and low and behold I still have my mothers features and my fathers fixtures so I will have no choice but to refuse it. Thanks anyway Nick I think you meant it as a compliment but I am not sure, if you didn't just sat on it and rotate.
